The Disruptors Series — Part Four
We have spent three weeks covering the disruptors that most people understand as health issues — blood sugar, sleep, movement. This week we’re covering the one that makes all of them worse, the one that connects every thread we’ve pulled on this month, and the one that is simultaneously the most discussed and the most underestimated factor in modern metabolic health: what the majority of people in industrialized nations eat, most of the time.
What Ultra-Processed Food Actually Is
The term ultra-processed is not a judgment about taste or a commentary on moral food choices. It is a scientific classification — developed by epidemiologist Carlos Monteiro and the NOVA food classification system — that describes foods manufactured through industrial processes using ingredients and additives that have no culinary equivalent. They are not foods that have been cooked or preserved. They are foods that have been fundamentally reconstituted and engineered.
Ultra-processed foods typically contain combinations of refined starches, added sugars, industrial seed oils, artificial flavors, preservatives, emulsifiers, and texture-modifying agents that are designed to produce hyper-palatable products — foods engineered to be consumed in quantities beyond what the body’s natural satiety signals would otherwise permit. By some estimates, ultra-processed foods now account for more than fifty percent of caloric intake in the United States, and significantly higher percentages in certain demographic groups.
This is not a minor dietary variable. It is the dominant feature of the food environment that most people navigate every day.
How It Disrupts Blood Sugar
We covered blood sugar instability in Week One, but ultra-processed food is the primary dietary driver of that instability and deserves specific treatment here.
Ultra-processed foods are typically stripped of the dietary fiber, protein, and fat that slow the absorption of glucose from the gut. What remains is a highly refined carbohydrate matrix — or a combination of refined carbohydrates, industrial fats, and added sugars — that enters the bloodstream rapidly, driving sharp glucose spikes and the reactive insulin responses that follow.

Refined seed oils — used extensively in ultra-processed foods for their low cost and long shelf stability — are high in omega-6 fatty acids. While omega-6 fats are not inherently harmful, the ratio of omega-6 to omega-3 fatty acids in the diet has significant implications for inflammatory signaling. Traditional diets produced omega-6 to omega-3 ratios of approximately four to one. The modern processed food diet produces ratios of fifteen to one or higher — a shift that tilts the body’s inflammatory balance toward pro-inflammatory states.
Added sugars drive inflammatory signaling through multiple pathways — through the oxidative stress generated by blood sugar spikes, through the production of advanced glycation end products when sugars bind to proteins, and through direct effects on gut permeability that allow inflammatory triggers into systemic circulation.
The cumulative inflammatory effect of a diet dominated by ultra-processed foods is not theoretical. It is measurable in the blood of people who eat this way consistently — and it contributes to every health outcome we care about.
How It Disrupts Sleep
The relationship between diet and sleep quality is less often discussed but well-supported by research.
Blood sugar instability — driven by ultra-processed food consumption — directly impairs sleep. A blood sugar crash in the early morning hours triggers cortisol release that can wake a person from sleep or prevent deep sleep stages from being reached. The high glycemic load of a processed food diet keeps this disruption pattern cycling throughout the night.
The gut disruption caused by ultra-processed foods also affects sleep through the gut-brain axis. Serotonin — the precursor to melatonin, the hormone that regulates the sleep-wake cycle — is produced in large quantities in the gut, with microbial involvement. A disrupted microbiome means disrupted serotonin production, which means disrupted melatonin production, which means disrupted sleep.
The additives in many ultra-processed foods — including caffeine in unexpected places, certain artificial colors, and various stimulant-adjacent compounds — also have direct effects on sleep quality that compound over time.
